A salad is quite simply a mix of any veggies, fruit or herbs you have on hand – or anything at all really. There are no special rules here. My salads have a special ingredient though – I start with some marinated veggies as the base, add some fresh greens (rocket leaves, herbs) from my garden and add a generous dose of sprouts. I will cover sprouts and marinates in some future posts. But this one is just an intro to a simple and quick side you can make any time – mix all the veggies and season with something: olive oil and lemon juice, a more elaborate salad dressing or I like to season mine with home made mayo.

Left over salad can be mixed into your next batch of patties, or into minced meat creations of some sort.
